Pasta Jambalaya

Every since I started Weight Watchers, I have basically tried an entire cookbook full of recipes for dinner. And 99% of the time it comes out great! 1% of the time, however, it comes out UNFREAKINGBELIEAVABLY great. I mean so good I can't believe how low in points it is. So good that I think I am being bad but really I am being SO so so good.

Clearly I am psyched.

And now you can be too because here is the dish that has inspired this rant.

Pasta Jambalaya.
1/2 c diced onion
1 diced red pepper
1 minced garlic clove
1/4 tsp each chili powder, red pepper and salt
1 15-0z can black beans rinsed and drained
1 10-oz can tomatos and green chiles, undrained
3 oz turkey kielbasa, halved and sliced thinly
7 cups hot cooked wheat penne (about 3 cups uncooked)
1/2 cup reduced fat shredded Mexican cheese.

Coat a large nonstick skillet in cooking spray and heat over medium heat until HOT.

Add onion, pepper and garlic and saute for 5 minutes. Add spices and saute for 1 minute

Add beans, tomatos and kielbasa. Blend well. Bring to a boil (it may look like there is not much liquid in there but as everything cooks, more will come out!). Reduce, cover and simmer for 10-12 minutes.

Add to cooked penne. Top with cheese.

Serves 6 - 7 points a serving!

Can't go wrong with that!! And it's so filling, and so delicious (especially if you like Mexican food).
