I had to add this recipe to my "Dinners That I Can Throw Together at the Last Minute and Feel Pretty Awesome About".
First of all if you have something against frozen sliced peppers, this recipe isn't for you.
Secondly if you have something against frozen or canned beans + corn, this recipe isn't for you.
Thirdly, and I think most importantly, if you have something against canned diced potatoes you might want to move on.
Granted, you could sub in the fresh variety of all of these items and come out with a delicious meal but that would defeat the purpose of the whole Dinners I Can Throw Together At The Last Minute thing, right? Right.
And this is so delicious! I thought the potatoes might be kind of weird but, if you didn't already know, potatoes + salsa are a stellar combination and they work well with everything else going on in this dish.
So here were go - Awesome Skillet Chicken Fajitas.
2 cups cooked, diced chicken (You can use Perdue pre cooked stuff or cook up your own fairly quickly, you know how easy chicken is, that slut)
1 16 oz package of frozen, sliced peppers + onions
1 14 oz can black beans, canned and drained
1 14 oz can or 1 cup frozen corn
1 14 oz can diced potatoes
1 jar salsa
Flour tortillas
Sour Cream.
Olive Oil
Heat about 1 tsp oil over medium-high heat and throw in peppers.
Cook for 5 minutes. Set heat to medium-low and dd in corn and potatoes and beans. Cook for 2 minutes. Add in chicken and salsa, cover and reduce heat to low. Cook for 10-15 minutes or until cooked through.
Serve with sour cream on flour tortillas, fajita style!
Not bad for about 15-20 minutes of work!

I make a similar filling that I usually use for quesadillas but this looks even yummier AND healthier since it does not involve cheese as a main ingredient.
Sounds great. Do you still use your slow cooker? I use mine more when the weather gets chilly.
definitely! we had pulled pork sandwiches (made in the slow cooker) last week and this stew could definitely have been made in the crock pot

Only one thing missing - a cold Corona with Lime! I'm definitely giving this recipe a try. It looks like a great meal to make on one of those "my boss is a bastard for making me work late this close to the holidays" nights. By the way, my husband and I made and LOVED your Provencal Beef Stew!
Wait corn comes another way besides frozen? And I had never heard of canned potatoes until this moment. And anything with black beans is a friend of mine.
