Easiest Shrimp Scampi Ever

This recipe came in handy on Oscar night, when I wanted something easy to make but slightly fancy (I suppose to me, shrimp = fancy, even if it is frozen). It's super easy, healthy and delicious! So next time you are food shopping just throw in a bag of shrimp and a can of tomatoes and you will more or less be good to go for a quick and tasty dinner!

Super Easy Shrimp Scampi
(serves 4)

1 tsp olive oil
2 cloves garlic, minced
1 cup dry white wine
1 28-ounce can diced tomatoes, drained
Salt and Pepper
1 pound medium shrimp, peeled and deveined
1 cup prepared brown rice

Now, you can use fresh shrimp and peel and devein them yourself. I chose to buy a bag of frozen shrimp that already had all that jazz done to them. And I defrosted them by placing the bag in a large bowl of warm water for about 10 minutes.



Next get your olive oil going over medium high heat in a large sauce pan. Add the garlic and cook for 1 minute.



Add the wine, tomatoes and a sprinkling of salt and pepper. Simmer for 5 minutes or until slightly thickened.



Stir in the shrimp and simmer until heated through - about another 4-5 minutes.



Serve over rice!
