That which emerges from all day in a crock pot is warm, comforting and makes your home smell delicious. Precisely what we need as we head into brisk October!
I had a bag of split peas left over from a bean buying extravaganza a few months ago and decided a Split Pea Soup was in order. This soup is creamy, smokey, simple AND super budget friendly. You can buy all the ingredients for under $5 and it makes 4 large servings or 6 smaller ones.
Crock Pot Split Pea Soup
1 bag of split peas
2 cubes of low sodium chicken boullion
1 quart water
1/4 lb canadian bacon or ham, chopped
2 carrots, chopped
1 small onion, chopped
Put all ingredients in the crock pot. Turn on low and cook for 8 hours.
To make the soup more smooth, remove half the soup, pulse in the food processor and return to the rest of the soup.
Salt and pepper to taste.
Delicious!!
