Boursin-Stuffed Turkey Burgers



1 lb ground turkey
1/3 yellow onion
1/4 c parsley
1/4 c Italian breadcrumbs
1 tub of Boursin cheese
Olive Oil

Combine first four ingredients in bowl, cover and let sit in fridge for an hour.

Remove turkey from fridge, form into four equal sized patties. Split each patty in half and make two thinner patties. Put 1/4 of Boursin in the middle of one patty, spread out slightlt and place other patty on top, making sure to seal the sides by pinching and pressing. Repeat for other 3 patties.

Cook over medium heat until done, about 8-9 minutes a side.

Serve on toasted whole weat rolls.

Sarah - this is so funny. I make a similar dish with Boursin cheese, sort of like your chicken roll ups. I don't remember if I told you about it - but you just take chicken breasts, split them, spread a tablespoon or 2 of light garlic & herb Boursin and stuff with 2 or 3 sundried tomatos. Bake at 375 for 35 - 40 mins.

Boursin - its so versatile!
