adapted from a Sandra Lee recipe
1.5-2 lbs turkey breast, cut into bite size pieces
1 14.5 oz can of diced tomatoes w/ celery & onion
1 15 oz can of kidney beans
1 package of red beans and rice.
1/2 tsp chile powder
1/4 tsp cumin
Combine all ingredients in crock pot, stir until blended, cover and cook on LOW for 8 hours.
This is so easy, and tastes great! You can add whatever spices you want to to make it more spicy or smoky or omit them all together. I served it with some unsalted tortilla chips on the side!
