How Now Laughing Cow?

You know how when you're in a new relationship, everything is so exciting? And you want to do everything with that new other person and you love finding new ways to incorporate them into your life.

I feel that way.

About Laughing Cow Cheese.



Ah yes. I am in a deeply involved relationship with these 1 point, 35 calorie wedges of creamy delicious cheese. I love it on crackers. I love it on celery. And I would love to involve it in a main dish. You know like how you may want to impress a new significant other with a fabulous dish? I want to impress myself with how awesome Laughing Cow can be in a main dish.

And so last week, after a little experimentation: Pork Roulades were born!

They are SO easy. SO delicious. And by my estimation only 4 points a serving.

Let's get started:

Pork Roulades

6 thin sliced pork chops, trimmed of fat
2 Laughing Cow cheese wedges
1 large bunch Swiss Chard (or whatever wiltable green you fancy)
1 tsp chopped garlic
1 tbsp olive oil
3 tbso balsamic vinegar
salt and pepper
toothpicks

Preheat oven to 375

Heat oil in large pan over medium heat. Add garlic and saute for 1-2 minutes/until fragrant.



Add the swish chard and cook for about 5-8 minutes until wilted. Just before it's done splash in 1 tbsp of balsamic vinegar.



Set aside and take out your trimmed pork chops. Lay them in between sheets of wax paper and pound to 1/4 inch thickness. Salt and pepper and sprinkle with 2 tbsp of balsamic vinegar.



When the chard is cool enough to handle, spread an equal amount of the Laughing Cow cheese on each chop




put an equal amount of the wilted chard on top,



and then roll up, securing with toothpicks.



Place the roll ups seam side down on a baking dish and cook for 10-15 minutes until done.




Et voila!




Remove the toothpicks and serve over rice. Serving size is two roll ups! It's SO TASTY and delicous. Swiss chard is tasty in and off itself as is the cheese and both make the pork so moist and flavorful. Delicious.

That looks GREAT! And it would probably work with chicken breast too, no? Who would have thought about putting Laughing Cow in something like this? Well, WW, I guess.

I know! I want to submit it to WW because it's so delicious but so low points and yes chicken would definitely work just as well!

I put it into the recipe builder online and it comes out to 9 points/serving (assuming there are 3 servings). Of course, that depends on what type of pork you use.

i think that is definitely incorrect! the thin sliced pork chops are like 1 oz each (which is like 2 pts) and the cheese is only 2 pts IN TOTAL for all the chops.....

Ok, I changed it to be 6 ounces of pork, rather than 6 chops and it does come out to 4 points each. Phew! :)

I, too, am involved in a deep love affair with LC cheese. Here's what you could do for a slightly different recipe - get boneless, skinless chicken breasts and remove the "tender" - make a slit in the breast creating a pocket. In that pocket, spread a wedge (or 2) of LC cheese (I use the herb/garlic) and a few sun-dried tomatoes.

Drizzle with a tiny bit of olive oil, salt and pepper and bake at 350. Yum!

You are one talented girl. I love WW and have tried many recipes and I also love LC. Have you tried the LC Alfredo sauce, I hear it's yummy!!! Never tried though...

Laughing Cow Alfredo sauce/3 Fat Chicks

1/2 cup skim milk
3 Laughing Cow Creamy Swiss Light wedges
1/2 T. parmesan cheese
1/2 T. Molly McButter
1 pinch garlic

Throw everything in a small sauce pan. Stir until melted and creamy, about 10minutes.

This makes 1-2 servings, depending on how much you like. It's also 2-4 WW points

Oh my goodness...I'm definitely going to pick up some laughing cow next time I'm at the store and make this (with pork OR chicken) for Sean & I. I know he will love it and I'm always looking for more things I can cook that will be low calorie/points. Thank you!!
