Sometimes, after a long day at work and an incredibly long traffic-filled commute home: the idea of making dinner just seems so unappealing. i don't feel like making anything involved or difficult or time consuming. i just want something good, and something quick.

(keep your minds out of the gutter!)

In these cases: I break out the Chicken Parm. I usually have the neccessary ingredients just lying around, it's not difficult to make, and it's a really comforting meal after a long day.

Easy Chicken Parm
2-3 tbsp olive oil
4 boneless chicken breasts
2 cups spaghetti sauce (any kind)
1 box of spaghetti
shredded cheese.
1 egg
2 cups Italian flavored bread crumbs

Preheat oven to 350

If the chicken breasts are particularly thick, you may want to tenderize them with a mallet until they are 1/2 inch thick or so. this is also an excellent way to relieve work-related stress

Salt and pepper the chicken. Beat the egg in a shallow bowl. Spread breadcrumbs on a plate and lightly dip the chicken first in the breadcrumbs, then into the egg, and then into the breadcrumbs again this time pressing firmly and making sure it's completely covered.

Heat oil in skillet over medium heat. When oil is hot, place the chicken in the skillet, turning occasionally and cook for 10 minutes or until browned.

Remove chicken and place in glass paking pan. Cover chicken in spaghetti sauce and sprinkle with shredded cheese (any kind will work...i used Mexican last night and it came out great!)

Bake chicken at 350 for about 20 minute. While it is in the oven prepare spaghetti.

Serve hot chicken over spaghetti with extra sauce.!

Total time to prepare: 35-40 minutes.
