Fun with Neufchatel

Neufchatel is a very soft, spreadable cheese , a lot like cream cheese. It differs from true cream cheese because it is made from whole milk and not cream and thus has about 33% less fat which is good times if you ask me. But you can still use cream cheese for any of these and it comes out the same.

First, for the sweet tooth

Take 8 oz stick of chilled Neufchatel and cover with about 1/2 cup Fig Compote or Fig Pastry Filling (which you can find in most supermarkets in the Baking Aisle or the Jelly/Jam section). Serve with water crackers/apple wedges/any not strongly flavored cracker.

Now, for the heart patients

Take 4 oz of Neufchatel and combine with 1/4 cup refried beans and 1/8 cup salsa. Blend and serve with tortilla chips.

I have a slight variation on the "sweet tooth" neufchatel cheese recipe. There are some similar jam/jelly/marinade jars out there that are a raspberry chipotle flavor. Pour it on top of the cheese and also serve with those very same crackers. You can't get enough of it! It's sweet with a bit of a kick. Highly recommended.
