A Chile of a Chop

Adam and I have a standing date every Wednesday night. It's important, even if you live together and especially if you are both busy, to set aside time to spend together and our Wednesday night date night is exactly that.

And it's at one of the most happenin' joints in town.

HANNAFORD.

Oh yeah.

We do our weekly food shopping every Wednesday at this most beloved of Quincy food shopping establishments (because they sell booze uh I mean because the produce is AWESOME!)

I love Hannaford. Not just because of the booze cough PRODUCE but because you see shiz like this.

Yeah.

Although I used to go to a Stop and Shop where instead of weird stuffed squirrels next to the vending machine you find scary drunks. So I take this and consider myself lucky.

Anyway when we food shop it is an ordeal which I have to admit initially was a drawback to me. I like to get in, get my stuff, and get out. But when I go with Adam we laze around and I can't focus on my list and we end up taking twice as long not to mention getting twice as much stuff because Handsy McLovesHisSnacks can't stick to the list.

But you know it's also twice as fun. So I acquiesce.

But you know you get home at 7PM after a couple hours of food shopping and you just can't get it up for an involved meal, you know? So nights like this you turn to Chile Rubbed Pork Chops (4 WW points a chop!). It's spicy (but not too spicy) and its delicious. Oh and it's QUICK.

So here we go

Chile Rubbed Pork Chops
2 tbsp chile powder (or 1 tbsp Cajun seasoning and 1 tbsp chile (I LOVE Cajun seasoning)
1 tbsp brown sugar
2 tsp cumin
1 tsp garlic powder
2 tbsp Worcestershire sauce
4 pork chops, fat trimmed.

Combine the first 5 ingredients



Coat the chops evenly and let sit in fridge for 10-15 minutes to give all the spices a chance to set



Now you could broil them if you want but me? I prefer the cook + bake method so preheat your oven to 350. Set the pork chops in a pan over medium heat and cook 3 minutes a side.



Remove to a baking pan (or just plop the pan in the oven. I THINK my pan might be oven proof but i can't remember and I lost the manual. So better safe than sorry). And bake for 10-12 minutes.



Serve with rice and greens.

Delicious. Tender. SUPER TASTY. And ready in about half an hour. Nothing wrong with that!

We LOVES us some pork chops in my house and this looks delicious. Plus I'm always up for meals that are quick and easy. I will definitely use this one (after the move, of course).

you know what I love about hannis? The little cookbook magazines. I have like 10 of them, they are awesome!

While the recipe looks yummy and I will be stealing it, what I am really laughing about is the several hour grocery store trip. I can get in and out in under 20 minutes but Aaron (aka Snacky McCheeseandcrackers) likes to make grocery shopping a "family outing" so every week, it's me, him and the kid and we are literally in Whole Foods for an hour and a half, making sure we "have enough snacks" to make it through the week.

Which is approximately an hour and a half longer than I like to spend in Whole Foods.

My roomie recently decided to do WW so I decided to get on board too and help out since she can't cook for beans (well, neither can I but I do try). I definitely want to try this!
